CHICKEN CHETTINAD

Chicken Chettinad is a popular dish from Chettinad region of Tamil Nadu.  Its a Spicy dish with aromatic spices. 



INGREDIENTS:

  1. Chicken---------------------200gms
  2. Cinnamon-------------------3gms
  3. Cardamom------------------3gms
  4. Cloves-----------------------2gms
  5. Pepper Corn----------------3gms
  6. Bay Leaf--------------------2gms
  7. Dry Ginger-----------------3gms
  8. Kashmiri Chilli------------5gms
  9. Methi Seeds----------------1gms
  10. Coriander Seeds-----------2gms
  11. Jeera------------------------3gms
  12. Sauf------------------------2gm
  13. Star Anise-----------------1gms
  14. Mace-----------------------1gms
  15. Oil--------------------------15ml
  16. Grated Coconut----------20gms
  17. Onion---------------------20gms
  18. Ginger Garlic paste-----10gms
  19. Tomato-------------------40gms
  20. Coconut Milk------------2gms

METHOD:

  1. In a pan dry roast all whole garam masalas along with grated coconut. Give it nice roasted colour, do not burn it.

  2. Blend all the roasted masala with ice into a thick paste.

  3. In a handi, heat oil & sauté sliced onions till brown. Add in ginger garlic paste and let it cook.

  4. Add tomatoes and cook.

  5. Add in the masala paste & cook till it leaves oil. (which shows that the gravy is completely cooked)

  6. Add in the chicken & cook till chicken is cooked. (masala should coat the chicken)

  7. Check seasoning and finish with some coconut milk and crushed black pepper. (gravy should be semi dry)

  8. Serve hot with Indian breads(Dosa, Appams or Paratha's ) or rice.
