PIRI- PIRI SAUCE

Piri piri sauce (used as a seasoning or marinade or dip) is Portuguese in origin.  It is made from crushed chillies( piri piri, a type of bird’s eye chili from Africa), citrus peel, onion, garlic, pepper, salt, lemon juice, bay leaves, paprika, pimento, basil, oregano, and tarragon.
Its really delicious and spicy sauce, you can serve it with anything you want and can also use as marinades for meats and seafood. It can also be used as a dip for snacks.
 



INGREDIENTS:

1.Fresh red chillies--------------------------12 no
2. Garlic(chopped)-------------------------4 cloves
3. Oregano( fresh or dried)----------------3gms
4. Tarragon-----------------------------------3gms
5. Paprika------------------------------------5gms
6. lemon juice-------------------------------1 no
7. Olive oil----------------------------------100ml
8. Sea Salt-----------------------------------5gms
9. Red Wine Vinegar-----------------------20ml

 
METHOD:
 
1. Deseed chillies. Pan Roast chillies to give it nice smoky flavour.
 
2. Cool and roughly chop the chillies.
 
3. Place the roasted chillies, garlic, salt, oregano, paprika, Tarragon and red wine vinegar in a saucepan, and simmer for 2-3 minutes
 
4. Allow the mixture to cool. Take this mixture in a food processor or a blender, add Olive oil & lemon juice and blend to a coarse mixture. (You can blend into a smooth paste, depends on your choice. But I prefer to keep it coarse)
 
5. Remove the sauce from blender, store in a container and refrigerate.
 
6. Serve whenever required.
